I came across this recipe on a blog i follow, hollywood housewife. when i saw this recipe she posted, i put the ingredients on my shopping list and headed briskly out the door.. i could tell i would want to lick the plate after this meal and thought my {picky-ish} hubby would love it too.. i am so NOT creative these days with dinner. life is so crazy and i do not have time but i love to sit as a family to eat.. so quick healthy meals are like gold.. this dinner was a hit and it is going to be a staple in mi casa for sure.. so here goes the recipe...
1 lb ground pork
1 lb linguine
4 green onions
2 tbs soy sauce
1 clove of garlic
1 tbs red pepper flakes
1 jar of panda express mandarin sauce
3 tbs peanut butter {i liked the chunky for texture}
boil your linguine per package directions {8min i think?}
drain and set aside.
meanwhile.
start by browning the pork and green onion..
i added the soy sauce, red pepper and garlic here..
once 3/4 of the way cooked, add the mandarin sauce and finish cooking..
then simmer on low..
mix your peanut butter with some hot water until you get this consistancy..
i just kept adding bit by bit..
once mixture is just right, add it to your drained, cooked linguine..
now dump your pork mixture right on top of your peanut butter noodles and sprinkle with some left over scallions..
voila'..
easy and plate lickin' good...
